I’ve lost 74 pounds in 10 months doing Keto and following @blackketogirl. I feel like a new person, and I’m so happy! I have more to lose, but I’m so glad that I started and have gotten this far.

I started my journey after a good friend of mine lost weight. I said, “If she can do it, I can do it.” and I started on a random Wednesday. I didn’t prepare for it. I just jumped right into no carbs (only from veggies) or sugar and a gallon of water a day.

What I Love This Week

It might be a liiittle early to start planning, but James’ first birthday is coming up in early September and I can’t help but think about themes for the party. What are his favorite things? Dogs, swimming, books…Daniel told me he had the perfect idea but that he couldn’t tell me about it or it wouldn’t work, so of course I pressed until he told me, “The theme would be ‘mumma,’ because you’re his favorite thing, but I’d have to plan it and execute it or you’d just seem like a complete narcissist.” Picture my face on balloons and napkins and a cake ha! Sheet Pan Shrimp Tacos with Creamy Cilantro Sauce

Every day should be Taco Tuesday! And it can be with this super easy and delicious Sheet Pan Shrimp Tacos Recipe with Real California cilantro crema. The best part is the cilantro crema – and you only need a handful of ingredients to throw it together.

Shrimp Taco Ingredients:

1 lb. shrimp [peeled, deveined, tail off]

2 Tb. olive oil

1 Tb. lime juice

1 Tb. minced garlic

1 tsp. chili powder & cumin

salt & pepper to taste

Plus – tortillas, lime wedges and Real California cotija cheese

Cilantro Lime Crema for Tacos Recipe

Cilantro Crema Sauce Ingredients:

3/4 c Real California Crema Mexicana

2 Tb. lime juice 

1 tsp. lime zest

1/4 c diced cilantro

salt & pepper to taste

shrimp tacos recipe


Pre-heat oven to 400 degrees.

Mix olive oil, lime juice, garlic, chili, cumin, salt & pepper. Pack shrimp dry and combine with marinade.

Place shrimp on foil lined baking sheet, leaving room on one side to add tortillas.

Bake until shrimp are cooked through about 8 to 10 minutes.

Stir shrimp half way through and add tortillas to baking sheet for remaining cooking time.

When shrimp are done and tortillas warm – build your tacos.

Top with cilantro sauce and cotija cheese. Serve

Strawberries and Cream Chocolate Ice Cream Bars

Summer recipe alert! I had some coconut meat I had to use up and I’ve never used my popsicle molds before so I decided to make some!

These popsicles are really creamy, full of flavor and texture, enjoy!

Strawberry Chocolate Popsciles

Vegan, gluten-free creamy popsicles enrobed in chocolate and candied nuts.



Servings: 6

Strawberry Ice Cream

  • 1
    soaked for 2 hours
  • 1
    1/4 cup
    almond milk
  • 1/2
    young coconut meat
  • 1/2
    lakanto or xylitol
  • 1/4
    coconut oil
  • 1
    freeze dried strawberry powder
  • 1
    beet powder
  • 1
    sunflower lecithin
  • 8
    strawberry essence
  • 5
    vanilla essence
  • 1/4
    high mineral salt
  • 1/2
    freeze dried strawberries, chopped

Candied Nuts

  1. Rinse nuts really well and strain.

  2. Add all ingredients in a bowl and mix well until combined.

  3. Place on a lined dehydrator tray and dehydrate at 115 for 24 to 36 hours.

  4. Once dry, process in a food processor until a crumble consistency.

Strawberry Ice Cream

  1. Blend all ingredients except freeze dried strawberries until smooth.

  2. Add freeze dried strawberries and combined with a spatula.

  3. Pour ice cream into popsicle molds and freeze overnight.

What I Love This Week

For James’ first Fourth of July, we drove up to my aunt and uncle’s lake house in New Hampshire and spent the day swimming in the lake, eating hamburgers and hotdogs, and catching up with family. The whole day was fun and memorable, and I’m especially thankful to report that James handled the 90-minute car rides there and back like a champ. He’s never been too fond of long car rides (he does fall asleep for 20 minutes or so) but he surprised me. He slept for almost half of the drive up and only cried for the last 30 minutes on the drive home (one thing that helped was bringing a few toys specifically for the ride back).

I’m also proud to report that I managed to coordinate not one but *two* red, white, and blue outfits for each of us. But one thing I always wonder while getting us ready for a party or holiday is, how do moms look put together at these things? I might look halfway to decent before we leave the house (roughly a 50% chance) but once I arrive anywhere I’m in a light sweat, my hair is frizzing (and if it’s down,
